KRUMKAKE
With fall approaching I thought it would be a good time to start sharing some of my favorite family cookie recipes! Many Norwegian-American homes serve Norwegian cookies at Christmas, but my family serves them at virtually all get togethers which includes Thanksgiving! If you were to ask me which Norwegian treat is my favorite my answer will likely just be whatever I have had most recently, so in this case it is krumkake! This cookie is very delicate both in how you eat it an

OUR NORWEGIAN THEMED WEDDING
There is no big surprise that our wedding was themed Norwegian! In honor of our eight year wedding anniversary today I thought I'd share pictures from that big day! We did a number of things to add a Norwegian element to our wedding unfortunately not all were captured on camera so I'll talk through some as I go. One of the focal points of our wedding though was our Kransekake (Norwegian Wedding Cake). The cake was made for us by Tor's aunt Pam which made it even more speci

LEFSE ❤️
Bayli, a friend and neighbor of mine, recently reached out to me asking for lessons on how to make lefse. Her grandma was giving away a bunch of her things which included her lefse gear. Bayli's grandpa was concerned that he wouldn't get any lefse anymore so she wanted to learn how to make it and send him some for father's day. I immediately said yes and we worked to set up a baking date. The baking session went great with some lefse rounds looking round and others looking

Kringle, Kringle, KRINGLE!
This is my all time favorite cookie... EVER! Unfortunately I can't make them exactly the same way as my grandma Mary can so to be honest my grandma's kringle is my all time favorite cookie. I don't know a single person who can make their cookies as good as their grandmas. It is a high bar to match. This cookie is soft and light in flavor with a touch of sweetness. I can eat six or seven in one sitting without even thinking about it. In our family we typically enjoy this coo

ROSETTES - A FAMILY LEGACY
StartFragment This post is extra special to me because I not only used my Grandmother Lillian's recipe, but I also used my Great-Grandmother Dora Jacobson's (Lillian's mother) rosette irons that were passed to my mother Connie and then to me. In speaking with my mother, she isn't sure if they were originally owned by Dora or by Dora's mother (my Great-Great Grandmother). They are at least 50+ years old and when purchased they cost $1.25 which is shown in the photo below sinc

LEFSE MADE WITH LOVE
Potato Lefse is a Norwegian specialty, especially during Christmas, but also served during the year for special occasions. A simple recipe with few ingredients, but it takes a little practice to roll them out very thin and some muscles to rice the potatoes. So be ready to feel a little burn in your biceps!
