MOTHER'S DAY BRUNCH LOVE
If your mom is anything like mine, she has spent hours in the kitchen showcasing her love for the family through her cooking. With that in mind, why not repay the favor with these sweet little Scandinavian heart pancakes on Mother's Day! Gather the family around the table and celebrate mom and all she does each day throughout the year. Mother's Day in Norway is celebrated in February so really you could celebrate mom twice during the year!

RECIPE
1 c four
2 T baking powder
2 T sugar
1/2 t salt
1 egg beaten
3/4 c buttermilk
2 T vegetable oil
1/4 c water
cooking spray
berries & syrup for serving
TOOLS
Large Frying Pan or Griddle
Large Mixing Bowl
Medium Mixing Bowl
Spatula
Heart Pancake Rings
Whisk
Spoon
Makes 6-8 pancakes
PREPERATION
Heat a large frying pan or griddle to low-medium heat and spray both the heart rings and griddle/pan. Place the rings on the griddle to warm as well. Be sure to not have the wooden handle resting on the heated surface.
Mix dry ingredients together in large mixing bowl and the wet ingredients together in medium mixing bowl. Whisk the egg until smooth.
Add the wet ingredients to the dry ingredients and mix thoroughly.
Add one and half spoonfuls to each heart ring using the spoon to spread the batter throughout the shape. You want the battler to be a fairly thin layer on the grill because the pancakes will rise. Pancakes that are too thick will burn on the outside before the inside is fully cooked.
Once the pancakes start to form bubbles on the top layer, take the heart ring off the grill and flip the pancake.
Remove the pancake from the iron once the bottom side is lightly browned.
Add berries and syrup to serve.
